Then, I add the diced onion and minced garlic, sautéing until softened and fragrant, about 3–4 minutes. Next, I add the chopped kale to the pot and cook until wilted, stirring occasionally, for about 5 minutes. Then, I stir in the diced tomatoes (with their juices), white beans, vegetable broth, dried thyme, and smoked paprika. I bring the mixture to a simmer and let the stew simmer for 15–20 minutes until the kale is tender and the flavors meld together.
