I’ve experimented extensively with strawberry wine vinegar in my California kitchen, and it’s become my secret weapon for elevating everyday dishes. After making homemade fruit wines for years, I found that slightly oxidized strawberry wine creates an incredible vinegar that transforms simple ingredients. The magic happens when you use strawberry wine vinegar as a glaze reduction for grilled meats or roasted vegetables. I reduce it with a touch of honey and balsamic, creating a glossy finish that adds both sweetness and acidity. After developing spice blends for global cuisines through Raw Spice Bar, I’ve found that strawberries work incredibly well with warming spices to create unexpected flavor combinations that most people never try. One technique I use is macerating sliced strawberries with a pinch of our berbere blend (Ethiopian spice mix with chili and warm spices) for about 15 minutes. The slight heat amplifies the strawberry’s natural sweetness while adding complexity. Roast Strawberries with Vegetables for Savory Twist
Strawberries can be roasted with vegetables to form a combination of flavors that are unexpected by most people. I mix 200 g of carrots, 150 g of parsnips, and half a dozen strawberries cut in half and roast them at 180 degrees Celsius for 25 minutes. The fruit becomes soft and caramelized, providing a slight sweetness to counteract the earthy flavor of the vegetables. It is an easy procedure that makes an otherwise common side dish unforgettable and free of refined sugar. 
The dish pairs well with salmon or sea bass, with the strawberries cutting through the richness of the fish. A serving contains approximately 40 calories but also provides antioxidants and vitamin C, which are retained during roasting. It is economical and healthy because the preparation takes less than 30 minutes, and it costs less than five dollars to serve two people.

Dehydrate Strawberries for Long-Lasting Snacks
As both someone in floral design managing space and someone deeply connected to gardening, I love finding creative ways to extend the life of what we grow. One of my favorite tricks is dehydrating strawberries because this actually enhances the flavor, and they last much longer this way.
To do it properly, make sure to thoroughly wash the strawberries and remove the stems. I slice them thinly, about 1/8 to 1/4 inch thick, as this is important for even drying. Whether you’re using an oven or an air fryer, the process is pretty simple. For oven dehydration, line a baking sheet with parchment paper, lay out the strawberry slices in a single layer, and set your oven to 200°F. Let them bake for 2–3 hours, flipping them halfway through to make sure they dry evenly. They should be dry but still pliable when done. If you’re using an air fryer, set it to dehydrate or to 180°F and place the slices on the tray. They’ll need about 2 hours. You can add them to trail mix, mix them with yogurt, or even use them in homemade granola bars.
